Tencha harvest in Japan

These days, the harvest of Tencha leaves is introduced, which we process to matcha for our Organic Magic Caps. The fresh, delicate tea leaves are also excellent for preparing food, as seen here as "Tencha leaves in tempura dough".
For our Matcha, only the youngest leaves are used (two leaves and a bud), the harvest period at the beginning of May lasts only a few days.
